How to actually hit 30 minutes

  • Put the pan on the heat before you start chopping — preheating is dead time.
  • Salt the pasta water while it heats, not once it boils.
  • Get everything out of the fridge first. Cold butter and cold meat are the usual reason a 30-minute recipe takes 45.
  • Use the serving picker on each recipe so you are not scaling amounts in your head.
